Baked Whole Mutton Snapper

1 Whole Mutton Snapper, gutted and cleaned

1-2 onion, chopped

1-2 potatoes, sliced

In large foil pan place half the potatoes and onions on the bottom.  Place snapper on top and smother with mojo, inside and out.  Place remaining potatoes and onion on top of snapper and pour the mojo on top.  Bake at 375 degrees until cooked thru.

Mojo

1 cup lemon juice

1 cup olive oil

2 cloves garlic

Parsley

Salt and pepper

Make the mojo in a blender, adding parsley and salt and pepper to taste.

Note: Cooking time will vary based on the thickness of the fish.
